Style: (Apple Pie – Tonka Beans) PASTRY Sour Ale

This is our first PASTRY SOUR ALE, inspired by American apple pies, but instead of going for a classic, we added a big favourite of ours, tonka beans.

We went for Braeburn apples to brew this ale using the same variety that is found in classic American apple pies, which, to follow the American recipe, we spiced up with cinnamon, a pinch of nutmeg and a touch of vanilla, as well as tonka beans to enrich its flavour. The mouthfeel also reveals notes of biscuits, which we sought to achieve through our choice of malts. Finally, lactose is used to enhance the round, silky, sweet and biscuity notes.
